How to Make Oatmeal Buttermilk Pancakes

A perfect way to start your day, pancakes are both delicious, and an excellent source of carbohydrates, which serve as slow burning fuel to provide energy throughout your day. Pancakes are also very simple to make, requiring only the ability to safely operate a gas or electric cook top. This recipe in particular can be prepared in 15 minutes, and produce enough pancakes to serve 3 people in around 15-20 minutes. This instructable will guide you through the process of creating a delicious batch of my very own Oatmeal Buttermilk Pancakes, which I have refined to perfection over the past several years.

Gather Materials

Before jumping into things, take a minute make sure you have the required materials for this recipe. Gather the materials and measure out the portions before getting started. This will help things move more smoothly later on.

Equipment:

  • Non-stick pan
  • Spatula
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk / Mixer
  • Measuring cups

Ingredients:

Dry

  • 1 cup all-purpose flour
  • ¾ cup quick oats whole
  • ¾ cup quick oats ground
  • 3 tablespoon brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Wet

  • 2 cup buttermilk
  • 2 teaspoon vanilla extract
  • 4 tablespoon olive oil (extra virgin)
  • 2 large egg

Tip:

If you do not have buttermilk, you can make a substitute by adding 1 tablespoon white vinegar or lemon juice to 1 cup regular milk and mixing for several minutes. The higher percent of milk fat in the milk you use, the closer this substitute will be to actual buttermilk.

Prepare Dry Mix

Dry ingredients should first be mixed completely before adding any liquid ingredients. This will constitute the dry mix portion of the recipe.

Preparing the Mix:

  1. Add 1 cup all-purpose flour to the large mixing bowl
  2. Add ¾ cup whole quick oats
  3. Add ¾ cup ground quick oats
  4. Add 3 tablespoon brown sugar
  5. Add 2 teaspoon baking powder
  6. Add 1 teaspoon baking soda
  7. Add 1 teaspoon salt
  8. Stir the dry mix with your mixer until it has uniform appearance and texture

Tip:

Continually mixing while adding ingredients will help to achieve uniform mixture faster. If you have an automated mixer, it may be beneficial to use it for this purpose.

Prepare Wet Mix

Wet ingredients should be mixed separately before being adding to the dry ingredients. This will constitute the wet mix portion of the recipe.


Preparing the Mix:

  1. Crack 2 eggs into the medium mixing bowl
  2. Beat thoroughly with mixer or whisk
  3. Add 2 cups of buttermilk
  4. Add 2 teaspoon vanilla extract
  5. Add 4 tablespoon olive oil (extra virgin)
  6. Mix lightly until uniform

Making the Batter

With the wet and dry mixes prepared, they can now be combined to create the batter for your pancakes


Making the Batter:

  1. Pour the wet mix into the large bowl that contains the dry mix
  2. Mix thoroughly


Tip:

Make sure to remove as much dry mix from the walls of the bowl as possible. Pockets of dry mix that make it into the frying pan can lead to burnt spots on the pancakes and inconsistent flavor.

Customize Your Pancakes

As with any pancake recipe, experimenting can often lead to improvement. With your base mix prepared and ready to hit the pan, you can take advantage of this opportunity to add tasty stuff to suit your mood.

Feel like giving chocolate chip pancakes a try? Grab a handful and mix them in!

Not in the mood for sweets? Maybe some walnuts and raisins would better suit your mood

Whatever you feel like adding, mix it in and make the recipe your own!

Tip:

When it comes to adding in unfamiliar ingredients to a recipe, too little is always better than too much. Mix your batter well after adding additional ingredients to ensure consistent pancakes.

Prepare the Cook Top

A clean workplace is an essential part of preparing the perfect pancakes.

Make sure your cook top is properly cleaned and clear of clutter before proceeding further.


Additional items to consider:

  • Do you have a ventilation fan in your kitchen?
    • Use it!
  • Do you have additional lighting above your cook top?
    • Use it!

Turn Up the Heat!

CAUTION: Be mindful of hot surfaces and metal objects which may become hot while cooking. Contact with these surfaces and objects can result in painful burns!


Cooking Your Pancakes:

  1. Turn on the burner or heating element to a medium level
  2. Allow the pan to heat evenly
  3. Apply small amount of oil to pan
  4. Use a spoon or ladle to transfer batter to the pan
  5. Allow this side of the pancake to cook
  6. Use the spatula to flip the pancake
  7. Allow this side to cook for a similar duration of time
  8. Remove pancake from pan
  9. Repeat steps 3-8 until batter is all used
  10. Turn of the burner or heating element


Tips:

  • When pouring batter, a good portion size is 4-5 inches across
  • Do not pour directly from the mixing bowl, this could lead to a huge mess
  • A medium golden brown color is ideal for both sides of the pancake
  • If your pancakes are not cooking completely on the inside, try turning down the burner or heating element

Add the Finishing Touches

With your pancakes all cooked and your cook top turned off, now comes the opportunity to add toppings and further customize your creations. Try adding different toppings in different combinations to find the combination of flavors to start your mornings off right!
