Nutty Granola

I make this every week. I grab a handful when I am hungry and a bowl with almond milk every night. It is hearty, healthy, and yummy. Once it is made it is an easy fast snack. I don't overly sweeten it but it's your call. It is extremely versitile. You can tailor it to what you have or like. This is how I like it.
Ingredients

You'll need:
A large bowl
4 cups old fashioned oats
2 cups unsweetened coconut
1/2 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup sliced almonds
1/4 cup shelled hemp seed
1/4 cup chia seeds
1 Tbs Cinnamon
1/2 cup Coconut Oil
1/2 cup maple syrup
1 tsp vanilla
large cookie sheet and parchment paper
Turn on the Oven

Preheat the oven to 350 degrees.
Add Oats and Coconut

First measure out and add 4 cups oats and 2 cups of coconut to your large bowl. I have played with different amounts but I have found it is important to have alot of oats because it gives me the carbs I need. Remember you can use sweetened coconut if you want. I try to take it easy on the sugar.
Add the Nuts

Using 1/2 a cup of each kind of nuts makes it easy to remember. If you have other nuts by all means try them out. These are the ones I usually have on hand.
Add the Seeds

Add 1/4 cup of hemp seeds and chia. I like sunflower seed when I have them too. You might have other seeds. Use what you've got.
Season

I keep it simple with cinnamon but you could try nutmeg or pumkin pie spice. Occasionally I add a little salt but didn't do much for me.
Separately Mix the Wet Ingredients

I measure and mix the wet ingredients in the same cup. Half a cup of coconut oil and a half cup of maple syrup don't seem like much but it goes a long way. You could substitute butter or vegitable oil for coconut. You could also substitute honey for maple syrup. Don't forget the vanilla - 1 tsp.
Mix It Up

Now that you have mixed your wet and dry ingredients separately, mix them all together.

Cover your cookie sheets with parchment paper. With a spoon spread the granola evenly onto the large cookie sheets.
Bake 15 Minutes

Bake the granola at 350 for 15 minutes. If you like it browner you can do it longer but watch out, it is easy to burn.
Cool and Store

Let it cool on the sheets and store it. I use large containers that used to be used for pretzels.
