Nutty Banana Bread
Hello! This is the best banana bread recipe you will ever find! :) It's super easy to make and tastes delicious! Without further adieu, on to the recipe!
Ingredients
For this banana bread, you will need:
2 c. all-purpose flour
¾ tsp. baking soda
½ tsp. baking powder
½ tsp. kosher salt
1 c. sugar
½ c. canola oil
2 large eggs
1 tsp. pure vanilla extract
½ c. buttermilk (If you don't have any, mix a 1/2 cup of milk with a tablespoon of lemon juice)
3 medium bananas
½ c. walnuts or pecans
(NOTE: I doubled this recipe when I made it in the photo. The listed ingredients are for one loaf. I made two)
Dry Ingredients
PREHEAT THE OVEN TO 350 DEGREES
In a medium bowl, mix the flour, baking soda, baking powder, and salt together until well combined.
Wet Ingredients
In a large bowl, mix together the sugar, eggs, and vanilla until well combined. This mixture should resemble slush on a cold winter's day.
Banana Time!
Put all the bananas in a small bowl and mash them with a fork. This is a great way to get kids involved, because it's a simple and safe step that will make them feel included.
Making the Batter
Alternate adding about a third of each buttermilk and dry ingredients, mixing well with a spatula after each addition. When adding in the buttermilk, be cautious when mixing; you don't want it to splash!
It's Called BANANA Bread!
After the wet and dry are combined, add the bananas and gently fold them in. Mix until well combined.
Baking
In either a non-stick loaf pan or a greased one, pour the batter (REMEMBER: I doubled the recipe). Add the nuts on top (I pre-roasted mine for about 10 minutes before popping them on. I like them a little on the burned side. Omit if you don't want them burned. Or, just don't put nuts if you have allergies!)
Final Product
After bout 45-55 minutes of baking, test it with a toothpick. If it comes out clean, you're done! Remove from the oven, cool for 5 minutes in the pan, and then take them out using an offset spatula. Let cool, and enjoy!
