Supplies
Ingredients:
- Cookie dough
- Nutella
- Toppings/Filling
Tools:
- Spoon
- Muffin pan
- Shortening or cooking spray
- Butter knife or cake spatula
Prep the Cookie Dough
Begin by making your cookie dough, you can pretty much use whatever cookie recipe that you want. This chocolate chip cookie dough recipe is my favorite. If you don't like chocolate chip cookie dough use snickerdoodle or sugar cookie dough, etc.
OR if you like just use premade storebought cookie dough as shown in the image of the ingredients. The Tollhouse brand is great, but the generic store brand will work fine as well.
When the dough is ready make sure to chill it for at least 30 minutes.
Fill Those Cups
Preheat the oven to 350 F/176 C. Spray a muffin pan with cooking spray or use shortening. If it is a nonstick pan, I wouldn't worry about spraying the top, but if not, you may want to spray the top as well as the cavities.
Take a chunk of cookie dough and with clean hands or wear gloves, press it down into a cavity of the muffin pan. This will make a pocket for Nutella.
Now spoon in about a teaspoon or so of Nutella or a generic brand of hazelnut spread. You can also use peanut butter or the mini Reese's peanut butter cups or homemade peanut butter cups.
Then take another smaller chunk of cookie dough and flatten it out into a disc and place it on top. Seal the edges with your fingers.
Continue on filling up the rest of them. A 30-ounce container of storebought dough will make 9 to 10 of these.
Bake Those Cookie Cups
Time to bake them! Put the muffin pan on the middle rack and bake for 15 to 20 minutes until they are nice and golden brown on top. It may take a little longer or shorter depending on your oven.
If you fill them all the way up like me, they will bake over the top just like a muffin, don't worry that is normal.
Allow them to cool completely and I mean completely before trying to remove them. If you do it too soon, the top will just come off of it, leaving the main part still in the cavity, haha.
Cut, Twist, Remove, Serve
Once cooled to room temp, take a cake spatula or butter knife and cut the edges of the cookies to loosen them from each other. Then twist the cookie and the whole thing should come right out.
It is common for the middle to sink in as it cools, making a perfect pocket to fill with toppings.
TIP: Once they are ready to be baked, if you actually chill the whole thing for 30 minutes before baking the middle won't sink in as much.
You can eat it by itself or fill it with more Nutella, whipped cream, fresh fruit, or ice cream!
Enjoy!
