Nut-butter Chocolate Blondies, Flour and Egg Free

Use your favorite nut butter to make these simple, gooey, and delicious blondies! I used peanut butter because there is no better combination than peanut butter and chocolate to me. These are wheat flour and egg free which is great for those with allergies. Simply mix the ingredients and bake! No mixer required.

Supplies

Ingredients:

2 Tablespoons Ground Flax

6 Tablespoons Water

1 Cup Nut Butter (I used Peanut)

1/2 Cup Coconut Sugar or Light Brown Sugar

3 Tablespoons Coconut Flour

1 Teaspoon Baking Soda

1 Teaspoon Vanilla Extract

1/4 Teaspoon Salt

1/2 Cup Semi Sweet or Dark Chocolate Chips

Materials:

Large bowl, small bowl, measuring cups and spoons, 8 by 8 pan, oven.

Preheat and Hydrate

Preheat oven to 350 degrees Fahrenheit. Mix flax and water in a small bowl and set aside to hydrate while you mix the other ingredients.

Mix the nut butter and sugar together in the large bowl. Mix in coconut flour, baking soda, vanilla, and salt. Stir in your flax and water. This should have hydrated for about 5-10 minutes by now if you are like me and don't get out or measure your ingredients until its time to add them. It may not look like it will mix at first, but after a few more stirs it will all come together.

Add Chocolate and Bake

Add in your chocolate and spread into a 8 by 8 pan. You may line the pan if you wish but there is no need to grease. Bake at 350 for 18-20 min depending on how gooey you like it. Edges should be golden brown. I bake mine closer to 20 minutes.

Cool and Eat

Remove from oven and completely cool in the pan. Slice and eat!
