Norwegian Honeyed Root Vegetables

This is an old Norwegian recipe, one that supposedly goes back to the Viking age. I chose to make it because my family is Norwegian and because I like Vikings.
It's quite simple to make, and it's perfect for the next time you decide to pillage your neighbors house, a LARPing party, or anything of the sort.
It's vegetarian too, if that sweetens the pot for anyone.

Also, full disclosure. That isn't my photo up top. We were really hungry when this came out of the oven so my family ate the whole thing before I remembered to take a picture.

Gather Ingredients

Since this is a dish that Vikings may have made, it would be unacceptable to collect these ingredients in any manner other than a good old fashioned raid. So grab your shield and your trusty battle axe and head down to your local grocery store.

You'll need:
•Some red potatoes or sweet potatoes. (the amount depends on how much you like potatoes)
•3-4 carrots
• 2 medium sized parsnips (if you don't know what a parsnip is, just look for some albino carrots. They look like the nose of an evil snowman)

•extra virgin olive oil (the recipe could also use butter, but I wanted to make this with vegan friends in mind. If you would prefer butter, by all means use that)
•1-2 cups of chopped walnuts
• about 1/4 of a cup of honey

Preparing to Prepare the Dish

First, preheat your oven to 375 degrees Fahrenheit.
While that's happening, take the time to chop your vegetables up into small pieces. The carrots and parsnips should be chopped into thin little disks, and the potatoes should be chopped into little cubes, about the size of your thumbnail.

Put It in the Pan

Take a baking pan, like the kind you would use to bake a casserole in.
Cover the bottom in olive oil. Not too much, but enough that it can cover all of the food.
Now pour all of your freshly chopped veggies into the pan.
Add your chopped walnuts too.
Finally add in the honey (about 1/4 cup) and mix it all together as thoroughly as possible.

Into the Oven

Now, assuming your oven has finished preheating, take the pan and pop it in for an hour. Every once in a while get up and poke the vegetables with a knife. When they're tender to the point where the knife goes through with minimal effort, they're done.
Season with salt and pepper.
