Non-bake Cheesecake Torch (Extra)
You can use this cheesecake cream on top of pancakes or fill a strawberry for an amazingly sweet treat.
Ingredient:
8oz. room temp. cream cheese
1/2 cup granulated sugar, divided
3 large egg yolks
1/2 tsp vanilla
3/4 cup heavy cream
Optional:
1/2 tbsp. unflavored gelatin
2 tbsp. water
Topping:
Strawberries
Mix in Double Boiler
Mix the egg yolks, 1/4cup sugar, and vanilla
In a double boiler (I don't have one, so I use a microwavable bowl on top of a pot) have the water down to a simmer *NOT boiling* and make sure the water does NOT touch the bottom of the bowl.
Beat with an electric mixer until the egg become a pale yellow
Optional *in a small bowl, pour water on top of gelatin (don't mix, just let the gelatin absorb the water) and after the egg mixture is ready, add the gelatin to the double boiler and mix until thoroughly combined.
Set the bowl aside to cool
More Mixing
In a separated bowl (or stand mixer) mix the cream cheese and the other 1/4cup sugar until the sugar dissolves into the cream.
After the egg mixture is cool, pour it to the cream cheese and mix until combine.
Set aside
Whip and Scoop
Whip the heavy cream till firm peak (if you prefer soft peak, then make sure you use the gelatin mixture in this recipe)
Scoop some of the whipped cream into the other mixture and mix till just combine
Then pour the other mixture into the rest of the whipped cream and carefully mix till just combine (no over mixing)
Cover and Refrigerate for at least 1hr

After making wonton, coat them in sugar mix with a little bit of power cinnamon
Put the finish cheesecake mixture into a piping bag or plastic container bag with one of the bottom corner snipped off.
Pipe into wonton and top with sliced strawberries
I've also used it on top of pancakes and inside strawberries :3
