French Fried Jo- Jo style potato's make a wonderful snack and are easy to make, but the deep frying can add a lot of extra un wanted calories.  Here is a way to achieve the crunchy, crispy fried potato consistency without deep frying.  Save yourself the extra calories by grilling these yummy potato's.

Prepare Your Potato's

Make sure your potato is scrubbed clean of dirt and debris and give it a pat to dry.  I use a baking potato because of it's firmness and thick skin.  I start by cutting the potato's in half on the cutting board.  From there I cut the potato into wedges taking special care to make all the wedges about the same size to promote even cooking.

Season Your Potato's

To season, place the cut wedges into a large bowl and coat them liberally with vegetable oil.  Make sure that the wedges are well coated in oil, which will help adhere the seasonings and promote even browning.  For seasonings, I use:

2 TBSP Onion Powder
2 TBSP Garlic Powder
2 TBSP Smoked Paprika
2 TBSP Ground Black Pepper
1 TBSP Salt

Toss the potato's and seasoning in the bowl to make sure the spices are evenly distributed.

Adding Cornstarch to the Potato's

Adding corn starch to the seasoned potato's before cooking will add a crunch to the potato wedges.  Use about 3 TBSP of corn starch to coat the potato's the same way as you applied the seasoning.  The corn starch should adhere to the potato's with an almost lightly battered type of consistency.

Place the potato's either on a cookie sheet, or directly on your grill taking care to make sure they are evenly spread out and not touching each other.  The potato's should take about 25 to 35 minutes to cook, and I will turn them occasionally to promote even cooking.  When they are done, they should be crisp an crunchy on the outside while being soft and steamy on the inside.
