No Flour Cinnamon Blueberry Oatmeal Pancakes With Fruit & Raisin Topping

No flour pancakes = no bloating!
The pancakes are packed with vitamins, fiber, and protein- perfect for a healthy breakfast under 300 calories.


Ingredients (Makes 1 serving)

Pancakes:
  • 2 egg whites
  • 1/3 cup fat-free cottage cheese  (and I promise, you cannot taste the cottage cheese)
  • 1/3 cup oatmeal, dry
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract

Toppings:
  • 8 pieces raisins
  • 3 tablespoons blueberries
  • 2 strawberries
  • 2 cherries
  • 2 grapes
  • 1/4 cup diced cantaloupe
  • 1/4 cup diced watermelon
  • 1/3 peach

  1. Directions
  2. Set aside a tablespoon of blueberries, diced cantaloupe and diced watermelon.
  3. Dice up strawberries, cherries, grapes, and peach then set aside with other fruit.
  4. In a food processor, blend egg whites, cottage cheese, oatmeal, cinnamon and vanilla extract until it resembles pancake batter then fold in in two tablespoons of blueberries.
  5. Spray pan/skillet with non-stick spray, and heat pan/skillet on a medium-high heat.
  6. Drop two 1/3 cups of pancake batter onto the pan/skillet. Cook for 2-6 minutes on each side or until golden brown.
  7. Place pancakes on plate and top with fruit and raisins. 
Voila! Two low calorie, guilt-free loaded fruit pancakes. Enjoy!
