Ingredients (Makes 1 serving)
Pancakes:
- 2 egg whites
- 1/3 cup fat-free cottage cheese (and I promise, you cannot taste the cottage cheese)
- 1/3 cup oatmeal, dry
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
Toppings:
- 8 pieces raisins
- 3 tablespoons blueberries
- 2 strawberries
- 2 cherries
- 2 grapes
- 1/4 cup diced cantaloupe
- 1/4 cup diced watermelon
- 1/3 peach
- Directions
- Set aside a tablespoon of blueberries, diced cantaloupe and diced watermelon.
- Dice up strawberries, cherries, grapes, and peach then set aside with other fruit.
- In a food processor, blend egg whites, cottage cheese, oatmeal, cinnamon and vanilla extract until it resembles pancake batter then fold in in two tablespoons of blueberries.
- Spray pan/skillet with non-stick spray, and heat pan/skillet on a medium-high heat.
- Drop two 1/3 cups of pancake batter onto the pan/skillet. Cook for 2-6 minutes on each side or until golden brown.
- Place pancakes on plate and top with fruit and raisins.
