No-Fail Key Lime Pie

Key lime pie is a tangy and refreshing dessert perfect for any occasion. Follow these simple steps to create your own delicious pie.


Supplies

Ingredients:

Graham Cracker Crust:

  • 1/3 of a 1-pound box graham crackers
  • 5 tablespoons melted unsalted butter
  • 1/3 cup sugar

Filling:

  • 3 egg yolks
  • 2 teaspoons lime zest
  • 1 (14-ounce) can sweetened condensed milk
  • 2/3 cup freshly squeezed Key lime juice, or store bought

Topping:

  • 1 cup heavy whipping cream
  • ~2 tablespoons of powdered sugar to taste
  • sliced lime


Other Tools:

  • 8" spring form pan or pie pan of similar size

  1. Preheat your oven to 350°F (175°C)
  2. Crush the graham crackers into fine crumbs using a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
  3. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  4. Press the mixture firmly into the bottom and up the sides of a parchment lined spring form pan. (cooking oil can help the parchment stick)
  5. Bake the crust for 10 minutes or golden brown, then remove from the oven and let it cool while you prepare the filling.

Preparing the Filling

  1. In a mixing bowl, whisk together the egg yolks and lime zest until well combined.
  2. Gradually add the sweetened condensed milk while continuing to whisk until smooth.
  3. Slowly pour in the Key lime juice, whisking constantly until the mixture is thick and well combined.

Add Filling

  1. Pour the filling into the cooled graham cracker crust.
  2. Return the pie to the oven and bake for 15 minutes, or until the filling is set but still slightly jiggly in the center.
  3. Remove the pie from the oven and let it cool to room temperature.
  4. Once cooled, refrigerate the pie for at least 2 hours, or until well chilled.

  1. Whip heavy whipping cream until fluffy and add powdered sugar
  2. slice limes into thin slices (this will be used as a fun garnish).
  3. Remove chilled pie from oven and carefully remove from springform pan onto a cake board or tray
  4. apply the whip cream and garnish to your hearts desire!
