No Eggs Banana Bread

This banana bread is scrumptious & moist and so delicious. I didn't even get to take this final pic before my kids ran off with some of the muffins and my husband snuck in and cut off a HUGE slice of the bread.( not realizing I was taking pics and submitting this online). Anyways, this bread is made without the use of eggs. If you want to make this completely vegan, use vegan approved Margerine and any non-dairy milk such as: rice, soy or even coconut milk.

This will make 1 loaf and about 9 muffins

Ingrediants for No Eggs Banana Bread

5 very ripe bananas
1/2 Cup milk
1/2 Cup butter(softened)
1/2 Cup  chopped walnuts(optional)
1 teaspoon Vanilla extract
1 teaspoon Apple cider Vinegar
1 teaspoon baking soda
1 teaspoon salt
1 & 1/4 Cup sugar
2 & 1/2 Cup All-Purpose flour
Kitchen Aid Mixer(optional) Can be mixed by hand or with small hand mixer

*Pre Heat oven to 350

Step 1:
Add the apple cider vinegar with the milk, stir to combine & set aside

Step 2:
Add softened butter & sugar together in mixer
Mix until smooth
Add all 5 over ripe bananas
Beat until smooth and no big lumps remain

Step 3:
With mixer on low, slowly pour in milk & vinegar mixture
Add vanilla

Step 4:

In separate bowl, add all dry ingrediants together (Flour, Baking soda & salt)
Slowly add in mixed dry ingrediants 1 cup at a time
Beat until just combined (make sure to scrape the side of the bowl occasionally)

Step 5:

Chop Walnuts
Add and blend until just combined

 

Preparing the Pans and Adding the Banana Bread Mix

Grease & Flour 1 loaf pan and 9 spaces on a cupcake pan (I used PAM for the cupcakes)


Step 6:

Fill up the loaf pan alittle more than half full and set aside
Fill up each of the 9 cupcakes 2/3 full
 
Wipe away any cooking spray and spills on the cupcake pan, this will help prevent that nasty browning to the pans thats really impossible to get out.

In the empty spaces of the cupcake pan, add a tablespoon of water to each one. This will help prevent burning and add moisture to the cupcakes cooking

Baking the Banana Bread

Step 7:
Place loaf pan and cupcake pan in pre heated 350 oven next to eacother but leave room in between the two.

Bake the cupcakes for 12-15 minutes and checking for doneness with toothpick method( insert toothpick, if it comes out clean they are done, if not- bake for another minute or so, then repeat toothpick method)

Bake the loaf pan for 45minutes- 1hour use the toothpick method for checking for doneness.
