No-Bake Chocolate Peanut Butter Oat Bars

This dessert is relatively healthy, easy to make, and requires no baking. It combines the tastiness of oats with the richness of peanut butter and dark chocolate, offering a healthier alternative to traditional desserts.

Servings: One 8x8 inch pan

Ingredients:

  • 1 cup natural peanut butter (smooth or crunchy, based on preference)
  • ½ cup honey (or maple syrup for a vegan option)
  • 1 cup old-fashioned oats (use gluten-free if necessary)
  • ½ cup ground flaxseed
  • 1 teaspoon vanilla extract
  • A pinch of salt (if your peanut butter is unsalted)
  • 4 ounces dark chocolate (at least 70% cocoa)
  • 1 tablespoon coconut oil

 


Equipment:

  • Medium saucepan
  • 8x8 inch baking dish or pan
  • Parchment paper
  • Spatula or spoon for mixing
  • Knife for cutting
  • Refrigerator for chilling

Prepare the Pan

Line an 8x8 inch baking dish or pan with parchment paper, leaving some overhang on the sides for easy removal later.


Mix Wet Ingredients

In a medium saucepan over low heat, gently melt the peanut butter and honey (or maple syrup) together until smooth and well combined. Remove from heat.

Add Dry Ingredients

Stir in the oats, ground flaxseed, vanilla extract, and a pinch of salt (if using) to the peanut butter mixture. Mix until all the ingredients are fully combined and the oats are well coated.

Press Into Pan

Transfer the mixture to the prepared baking dish. Press down firmly with the back of a spoon or spatula, ensuring the mixture is compact and even.


Melt Chocolate

Break the dark chocolate into pieces and add it to a small saucepan with the coconut oil. Melt over low heat, stirring frequently, until smooth. Watch carefully to avoid burning.

Top With Chocolate

Pour the melted chocolate over the oat mixture, spreading evenly with a spatula to cover.

Chill

Refrigerate the pan for at least 2 hours, or until the mixture is firm and the chocolate has set.

Cut Into Bars

Once chilled, lift the mixture out of the pan using the parchment paper overhang. Place on a cutting board and cut into bars or squares with a sharp knife.

Tips

  • Consider stirring in a handful of chopped nuts (such as almonds or walnuts) or seeds (such as chia seeds or hemp seeds) into the oat mixture before pressing it into the pan for added nutrition!
  • If you're looking for an even healthier version, you can reduce the honey/maple syrup slightly, though this may affect the bars' stickiness and sweetness.
  • Ensure the bars are thoroughly chilled before cutting; this makes them easier to slice and helps them hold their shape.
