No Bake Chocolate Peanut Butter Cookies

Pretty lately my family went on a special diet for health issues with lots of restrictions, like no eggs, no butter, no sugar, etc. How is one supposed to make cookies without those essentials?!? Cookies have really always been a big thing, making up quite a bit of the snacks that we have in the afternoon. And so without them, everyone realized just how much they love cookies! This was one of the desserts that I made that actually tasted great and everyone liked! Even though we're off the diet now, it's still a keeper! It's awesome for hot summer days when you really feel like cookies but don't want to heat up the house by turning on the oven!

So let's start!

Supplies

For dry ingredients:

2 cups of coconut flakes, preferably large, but fine works as well or half and half

6 tablespoons coconut flour

1/4 cup of cocoa powder

1 teaspoon salt

Wet ingredients:

1/4 cup of honey

1/2 cup of peanut butter (or if you are on a restricted diet, use almond butter, which works well)

1/2 cup of coconut oil

Melt coconut oil in a saucepan. Once it's mostly melted, pour in honey and peanut butter. When the peanut butter begins to warm up, it'll somewhat start to dissolve into the coconut oil and honey, making it a lot easier to mix together. You're going to want to mix it until smooth, unless you don't mind a few little peanut butter chucks :)

Dry Ingredients

Combine dry ingredients (coconut flakes, coconut flour, cocoa powder and salt) and mix thoroughly so that everything is evenly dispersed.

Combine Wet & Dry

Make a well in the middle of the dry ingredients and then pour in the wet ingredients. Thoroughly combine the two together. Once you’re sure theres no more dry ingredients hiding at the bottom, decide if you need more coconut flakes. I tend to need more coconut flakes than I put in, so begin to add more until it becomes like the consistency in the second photo. I usually have to add 1/2 or 1 cup more.

Make Cookies & Freeze

Take a tablespoon measure and use that to make little mounds on a cookie sheet. The batter doesn't hold together until frozen, so don't try to make balls in your hands. It'll make a bit of a mess :)

Once all the batter is all in mounds on the cookie sheets put in the freezer for an hour or two until frozen.

Once frozen, they'll come off the cookie sheets pretty quick and they don't stick because of all the coconut oil in them. Enjoy these frozen cookies and please vote for me!
