Nice and Soft Focaccia With Olives

This Focaccia is really easy to make and it is very suitable as snack, for pic-nic, for parties and you can put whatever you like in it!

I decided to put just olives on top but you can try it also with rosemary or cherry tomatoes.

Ingredients

This is what we need to cook this focaccia:

  • 4 dl warm water (it shouldn't be too warm or too cold)
  • 25 g of yeast
  • 1 tea spoon of sugar
  • 50 g of olive oil (about 1 dl)
  • 500 g of flour
  • 1 table spoon of salt
  • olives and some coarse salt to garnish

I used the dough mixer machine for the whole mixing but it is fast as well to do it by hand.

First thing we need to do is melting the yeast in the water.

Once the yeast is melted we add the sugar and the oil and while we mix we add flour little bit at the time. Add salt almost at the end of the mixing.

We should have a dough that is elastic but sticky. Cover the bowl with film and leave it to grow for about 1 and half hour.

Spreading the Dough

After the dough has grown double of it's size we can continue by oiling our oven form. Then we spread the dough and garnish it with the olives, coarse salt and some more olive oil.

Lets leave it to grow some more time. Half an hour should be fine.

Half an hour is passed and our focaccia has grown more. Sometimes the olives come up with the dough so you can push them a little bit inside or when you eat the focaccia they will fall around.

Its time to bake!

Put in the oven at 220 Celsius degree for 20-25 minutes.

When we have taken the focaccia out from the oven we put it on a grill so that it dries on the bottom otherwise it gets moist and soggy.

Our Focaccia is now ready!

You can eat it just like that or fill it like a sandwich!

Some of my favorite fillings are:

  • Tuna, mayo, tomatoes
  • Parma ham and cheese
  • Tomato, mozzarella
