Ever feel like your pancakes could be better? Good. Let's put coffee in them :) These pancakes are the perfect mix of a quick breakfast and a wake-me-up; the essentials of the early morning rush. Have a jug of batter ready for the morning, and all it takes is five minutes to have them ready!

Recipe:

3 small eggs

225g plain flour

1 heaped dessertspoon of sugar

1/2 teaspoon baking powder

80ml of coffee (I used Nespresso but anything will work)

100ml milk

Method

First of all, you'll need to sieve the flour into a bowl, whisk in the eggs and then add the sugar. Then, mix the milk and coffee together, then mix that into the bowl, bit by bit. If the batter is too thick, add some milk. If it is getting too thin, just withhold some of the milk.

Now that the batter is prepared, you can put it aside in the fridge until needed. When you're ready, just add a little bit of butter to a frying pan and pour in some batter and cook until golden-brown on both sides.

The Stencil

If you have some extra time on your hands, try spicing up your pancakes with some dope stencils :)

You''ll need:

Some card (eg. cereal box)

Inkjet Printer

Paper

Glue stick

Sharp blade

Sieve

Cocoa powder/Icing sugar

First, find an image online. Simple black and white designs work best but if you are an experienced stencil aficionado you can be a bit more adventurous.

I used the Nespresso logo as an example.

Print the image, try to get it the right size, A5 is usually good.

Then glue the image to your card using a glue stick.

Taking a sharp blade cut out your design leaving the negative space intact.

Once you have the stencil ready, cook your pancake, place the stencil lightly on top of it, then gently sieve some cocoa powder or icing sugar over it. Once you are happy that the layer is even, remove your stencil to reveal your wack pancake! Congrats on making a wack pancake, you can eat it now.
