Nectarine Jam

this recipe makes about 1 cup and a half of jam, if you like you can double the recipe. 

Ingredients

you'll need:
3 median sized nectarines
1/2 cups sugar
2 tbsp lemon juice
1 1/2 tbsp pectin (or jam setta) 

First, chop up the nectarines into small bit sized cubes. Then place the nectarines into a small saucepan and chuck in the lemon juice and the pectin, bring it to the boil while stirring constantly.  

Simmer It

Once it's at the boil add the sugar and reduce to a simmer, cook it for about 5 minutes. or until thick.
To test if it is ready, place a drop of the jam onto a plate and let it cool, if you can draw a clean line through it with your finger then it's ready.
Ladle the jam into a clean glass jar and seal it while it's still hot, this way it's be airtight once it cools.
