My Take on Gordon Ramsay's Spicy Potato Breakfast Pancakes | Egg Free
I wanted to try Gordon Ramsay's spicy pancakes recipe, they look good, i never had spicy pancakes, it will be a new experience . Let's try to make them, thought the instructions in the video.
The ingredient list seems ok, nothing special, except mustard seeds that i could not find. I'm replacing them with dijon mustard, I hope it's gonna be fine. Also i don't like eggs and try to void milk a much as possible. As an egg "replacement" I use sodium bicarbonate and vinegar to introduce air in to the pancake batter, milk is replaced with tap water. In the video there is no specific ingredient amount, I will have to eyeball it.
Supplies
ingredients -
Pancake batter:
Ginger
Hot pepper
Garlic
Canola oil
Cumin seeds
Salt & pepper
All purpose flour
Sodium bicarbonate - 1 teaspoon
Vinegar - 2 teaspoon
Water
For the filling:
Onion
Turmeric
Boiled peeled and cut potatoes
Dijon mustard
Salt & pepper
Yogurt of choice
Making the Pancakes
Preheat a pan, adding cumin seeds and toasting them, after 5 minutes adding canola oil and frying for 5 more minutes. Gordon used olive oil, i'm adding canola oil, I don't see the benefit of just burning olive oil.
Cutting ginger, hot pepper and garlic.
Ginger and the hot pepper goes in the pan with the cumin seeds. frying for 5 minutes and the adding the garlic, 5 more minutes. Transfer to a big bowl, add flour, salt & pepper, oil, Sodium bicarbonate and water to get the desired consistency. Add the vinegar.
In to a hot pan, use one ladle per pancake, spread the the batter on the pan.
After 3-4 minutes flip, and fry for another minute.
Repeat with the rest of the batter.
Rolling and Taste Test
On each pancake spread the filling, Gordon uses the yogurt as a dip, i'm having the yogurt inside the pancakes,
roll them.
Overall they are nice, i can fill the heat from the chili and the yogurt. I'm not blown away, i did not flow the recipe exactly, but i don't think there will be a major difference if i did. Everything is kinda smooshed together. I definitely like the pancakes, next time I will use just the pancakes with some fresh filling, I need something more crunchy and chewy here.
The Filling
Cut the onion, add oil to hot pan, fry to get golden color, then add Turmeric, cut potatoes, salt pepper and dijun mustard. Toss everything to combine.
