My Pasta and Yellow Split Pea Veggie Dish

 I have a recipe at the bottom. It takes 45mins to complete from the simmering of the yellow split peas to dishing it into a bowl. Please forgive my instructions as its my first time putting it all together.

Chilli..you can miss it out if you prefer to.
Two onions and garlic according to your taste. I use the half of it. 
You can use what colour Sweet pepper you like. I used green and yellow sweet pepper for this receipe.
I used a bit of ginger for taste.
2 Vegetable Stocks
Salt (according to your taste)
Black Pepper (according to your taste)
Turmeric powder (two teaspoons or one if your prefer)
Butter about a knob or two.
3 pint water in a pot to firstly boil the split peas
200g of Pasta of your choice. I had some conchiglie shells and some penne pasta left over so I used them.

A couple medium sized of potatoes.
You could used half a tin of chopped tomatoes but in this instance I didn't use any tomatoes.


 

Step one: 250g of yellow split peas.Wash them under running cold water. Put them in a pot with 3 pints of cold water. Then let it come to a boil for ten minutes or until it starts boiling. Remove the froth from the top until it is near enough gone.If you need to top up more water then do so at this stage.


Put salt according to taste and a couple of table spoons of turmeric also a couple of teaspoons of black pepper. Give it a stir and let it simmer for 30 minutes. Do keep an eye on it as you may have to top it up with more water...but this time add a bit of the boiling water.
Step two: After 20 mins add in the pasta and chopped potato.
You can dice them small if you prefer.
 
Add in the vegetable stock in the pot. You can dissolve it in a small cup and add it in with the lentils.
 
While that is still simmering in a separate pot add the two chopped onions, butter, sweet pepper,chilli,garlic, some ginger and some parsley.
Let the onion go into a golden brown colour first before adding the tomatoes. Let it simmer for about ten mins with the tomatoes.

Step two: After 20 mins add in the pasta and chopped potato.
You can dice them small if you prefer.
 
Add in the vegetable stock in the pot. You can dissolve it in a small cup and add it in with the lentils.
 
While that is still simmering in a separate pot add the two chopped onions, butter, sweet pepper,chilli,garlic, some ginger and some parsley.
Let the onion go into a golden brown colour first before adding the tomatoes. Let it simmer for about ten mins with the tomatoes.

Step three:Stir the first pot with the lentils..make sure it is not sticking..add more water if you need to. Check the pototoes and pasta has cooked before adding in the ingredients from the second pot into the first. If you need to add more salt and pepper then do so if not and everything cooked and the lentils are like smooth add the other ingredients into the pot.
Give it a stir and have a little taste to see if it is ok. If you need to adjust and add more spices or salt then do so.
 
I add green peas or sweetcorn to the lentils at times. You can change the recipe the way you like it. Its a great meal in itself and the lentils are always good as a base.
 
Good to Eat during the coming Winter Months.
