Mulan's Congee
Mulan is one of my favourite movies and I always wanted to have the congee that Mushu feeds Mulan before she trains. It always looked so delicious and now, here is a recipe that you can make so that you can defeat the Huns.
Congee is a savoury rice porridge and making a happy little face on it just makes it even more adorable and heartwarmingly magical!
Ingredients & Equipment
Ingredients
- 2 eggs
- 1 Piece of streaky bacon
- 3 cups of chicken stock
- 1/2 Cup of short grain rice
- 1/2 clove garlic, crushed
- 3cm piece of ginger, peeled and chopped into large chunks
- 1 Spring onion, chopped finely
- Olive oil to fry
Equipment
- Saucepan
- Frying pan
- Spoon
- Serving bowl and spoon
Cook the Congee
First, wash your rice s that the water runs clear. Then place it into a saucepan and add the ginger, garlic and spring onion. Mix it whilst placing it on medium-high heat and bring it to a boil. Once it boils reduce the heat down to a simmer with the lid on and continue to cook for 30-50 minutes, stirring occasionally. You want a very soft almost mushy porridge consistency.
Cook the Toppings
Whilst the congee is cooking heat some oil in a frying pan on a medium-high heat. Then cook 2 eggs sunny side up (for the eyes) if the egg whites begging to run, scrape them back into a circular shape. Cook the bacon to your liking to look like a smile (try and get a curved piece).
Finish the Congee
To prepare the congee remove the chunks of ginger and discard. then spoon it into a large white bowl and place the two eggs on top in the position of eyes. Then add the bacon smile and serve hot!
Serve
This is a lovely and warming breakfast food. it is lovely and savoury and just so adorable, it will give you all the energy you need for the day
