Mountain Bread™ - Vegetable Curry Pie

What you will need:
Ingredients:
- Mountain Bread of choice
- Broccoli
- Cauliflower
- 2x Carrots
- Onion
- Sweet Potato
- Zucchini
- 2x Garlic Cloves
- Chilli (optional)
Spices:
- A heap of coconut oil
- 1tbsp Curry Powder
- 1tbsp Garam Masala
- 1tbsp Veggie Stock
- 1tbsp Ground Cummin
- 1tbsp Tumeric
Pre-heat oven to 180ºc (356ºf).
Peel and cut the onion and garlic and cut all the vegetables into small cubes/pieces.
Note: Remember to wash your hands after you cut the chilli!
Heat some oil in a pan and cook the onion until it starts to brown.
Onced it has started to brown, add the garlic and stir for a few minutes.
Add 1/2 of the spices except for the chicken stock.
Add the sweet potato and carrots.
Once they start to soften, add the chilli.
Add the broccoli and cauliflower then add the coconut oil and stir through.
Once they have started to soften slightly, add the zucchini and the rest of the spices including the vegetable stock and salt and pepper to taste.
Simmer until softened.
Brush oil onto your pie dish and layer 2-4 pices of Mountain Bread (depending on preference).
Brush oil onto the the layers ensuring all edges are coated well.
Spoon in the mixture and cover with another 2 sheets of Mountain Bread then brush with oil.
Ensure all edges are coated well.
Place in the oven for 20-25 minutes until brown and crispy.
