Mountain Bread™ - Roasted Veggie Quiche

What you will need:
- Mountain Bread of choice
- 1/2 cup Grated Cheese
- 1/4 cup of Milk
- 200g Feta Cheese
- Broccoli
- Spinach
- Sweet Potato
- Red Capsicum (Red Pepper)
- Onion
- 4x Eggs
- 1/2 tsp of Ground Nutmeg
Pre-heat oven to 180ºc (356ºf).
Remove the stem from the capsicum and cut into small pieces
Peel the sweet potato and cut into small cubes.
Peel the onion and cut into wedges.
Lightly spray an oven tray with oil and place the vegetables you have just cut on to it.
Spray with a little more oil and season with salt and pepper.
Place in the oven for 15 minutes then turn over for another 10 until tender.
Layer 3 sheets of Mountain Bread onto a quiche dish in different directions to create a quiche base.
Brush a little water on the edges to seal.
Beat the 4 eggs together and add the milk.
Once combined, add the cheese and the nutmeg.
Remove the vegetables from the oven once they are tender and place at the bottom of the quiche base evenly.
Cover with spinach then add the egg and cheese mixture on top.
Finally, cover with feta and place in the oven for 20-25 minutes until golden brown and cooked!
