Monkey Bread Bites

I was craving something ooey-gooey and cinnamony. Usually this is made from store bought biscuit dough, but this version is made from scratch.


Supplies

For the dough:

1/4 cup warm water

1 tsp sugar

2 1/2 tsp. active dry yeast

3/4 cup warm milk

2 tbsp melted butter

3 tbsp sugar

1 tsp salt

1 egg

1 tsp vanilla extract

3 1/2 cups all purpose flour

Sugar cinnamon coating:

1/3 cup melted butter

3 tsp. cinnamon powder

1 1/2 cups brown sugar

12 cup muffin pan

Activate the Yeast

In a large bowl mix warm water, 1 tsp sugar and yeast.

Wait about 5 minutes for the magic foam to appear.

Making the Dough

Add 3/4 cup warm milk, 2 tbsp melted butter,1 egg, 3 tbsp sugar, 1 tsp salt, 1 tsp vanilla extract and 1 cup of the flour. Mix well.

Add the rest of the flour then mix until you can start kneading the dough. Knead the dough into a uniform large ball.

Cover it with plastic wrap or damp towel and leave to rise for about 30 minutes.

Brush a little bit of oil in the muffin pan.

Making the Coated Dough Balls

Place the melted butter in a small bowl. In a separate bowl mix the brown sugar and cinnamon.

Take the dough out on a clean surface and punch it down.

Pull of small balls, about 2 1/2 - 3 cm size.

Dip each ball into the melted butter and then roll it in the sugar-cinnamon mix.

Press 4-5 dough balls into each muffin cup.

Cover with a damp towel and place somewhere warm for about 40min.

Preheat oven to 175deg Celsius.

Bake and Eat!

Bake for about 30 min.

The dough should rise when its baking.

Spoon them out when their done and eat while they are warm!
