Mom's Cookies

Here's my family chocolate chip cookie recipe. I don't mean to brag but I think its the best out there and just wanted to share.

The List
2/3 cup Butter (Nucoa Margarine is what mom uses)
2/3 cup Shortening
1 cup regular sugar
1 cup brown sugar
2 eggs
2 tsp vanilla (Mom always made her own...read on for how)

3.5-3.5 cups all purpose flour
2 tsp Baking SODA
1 cup Semi-Sweet chocolate chips

You will also need an Oven preheated to 375 Degrees Fahrenheit , at timer, measuring equipment, and an ungreased baking sheet
...lets get to it

First Cream It

mom.jpg
Cream the Butter, Shortening, and both sugars in a large microwave safe bowl for about a minute in the Microwave or until soft
Next add the 2 eggs and 2tsp of vanilla*

***Pause****

To make the vanilla we must go back in time about 2 days ago (thats how long it needs to sit)

You need 6-8 dried vanilla beans and 1.0-1.5 Liter (Litre) of Vodka
Cut the vanilla beans lengthwise and drop in the vodka, let sit for a few days

***UnPause***

Preheat The Oven to 375 degrees Fahrenheit

Back to our bowl which now contains Butter, Shortening, Both Sugars, Eggs, and Vanilla

Beat it well...so its all mixed.

Get a Workout

mom.jpg
In our large bowl now we add the Flour one cup at a time for the first 2 cups but theres a trick...

In the first cup of Flower mix in 1 TSP of baking soda then add it to the large bowl and mix well

Do the same for the second cup of flour. Again mix it well.

Add the next cups of flour 1/2 a cup at a time until the cookie dough stops being sticky but is still moist
...this step depends on the altitude and moisture in the air, at one point I had a table and exact measures but I don't know where it is
...I am currently at sea level in a humid town so it takes 4 cups at 90% humidity

once you get the dough moist but not sticky add the chocolate chips and mix well

If you're doing this by hand you can get a good upper body workout in.

Split the dough into a bit larger than 1 cubic inch pieces (2.54cm^3) and place 1.5 inches apart on an ungreased baking sheet

Bake for 7-9 minutes...can't give a specific detail here other than not quite brown...Its easy to over cook so keep an eye on them

Take out of the oven and Let sit for about 5 minutes before moving to a cooling rack

Let sit another 5 minutes before eating

Hope you enjoy them I know I do :D

P.S. it makes about 3 dozen cookies
