Moist Sweet Cornbread
In this Instructable, I will show you how to make cornbread. This moist cornbread recipe is super easy to make using just a handful of ingredients. Do you like your cornbread sweeter? Add a bit more sugar, if you like it less sweet, add less sugar. Serve it up as a side with some yummy ribs, fried chicken, or just eat it plain or with butter and honey on it. Ingredients:
- 1 cup cornmeal (130g)
- 1 cup all-purpose flour (120g)
- 1/3 cup white granulated sugar (68g)
- 1/2 tsp. salt (2g)
- 1 tsp. baking soda (5g)
- 1 cup sour cream (240g)
- 1/2 butter, melted (salted or unsalted) (113g)
- 2 large eggs
Tools:
- 8x8 baking pan
- whisk
- spatula
- bowls
- shortening/butter/cooking spray for the pan
Dry Ingredients
Begin by preheating the oven to 375 F or 190 C. In a large medium bowl whisk together the flour, cornmeal, salt, and baking soda.
Eggs, Sugar, and Sour Cream
Now, in a large bowl add the two eggs, give them a good whisk, and then add the sugar and whisk to combine. Next, add in the sour cream and whisk that in.
Butter, Butter, Butter
Next, we melt the butter until just barely melted and not too hot. Use a microwave or a pot on the stovetop. Then pour that in the batter ans whisk it in.
Complete the Batter/dough
Now add the cornmeal dry mixture to the batter half at a time and whisk it in or use a wooden spoon or hand mixer or stand mixer. If using a whisk, it will get a bit hard to continue mixing it, so switch to a sturdy spatula and finish mixing. Scrape the sides of the bowl as well. The cornbread batter/dough is ready to go.
Baking the Cornbread
Take an 8x8 pan and grease it with shortening, butter, or cooking spray. Pour in the batter and spread it out with a spatula. You can also use a small round cast iron pan, or double the recipe and use a standard 12-inch cast iron pan. Bake it in the oven, middle rack, for 20 to 25 minutes until a toothpick comes out clean when poked in the middle.
Serve It!
After it comes out of the oven, allow it to cool for 10 to 15 minutes and then use a knife and cut it into squares. I usually do 9 servings for an 8x8 pan. I love cutting it in half and adding butter and honey to it. So yummy. Enjoy!
