Mochi Ice Cream Bites



I am Hiba and a big foodie. I own an Instagram handle and a YouTube channel with the name foodiffusion.
Came across this contest when my brother was doing another contest on this site. So I thought I must also do something here. So here is what I tried.
Mochi is a Japanese dish and normally the fillings are changed according to personal preferences. Here I did a dessert version of Mochi - mochi ice cream bites.
They are chewy on the outside and soft & creamy on the inside.
Supplies
Rice flour 1 cup
Water 1 cup
Sugar 1/4 cup
Corn starch for dusting
Ice cream for filling
Mochi Dough

Mix the rice flour and sugar in a microwavable bowl.
Mochi Dough

Add the water to it and mix it thoroughly without any lumps.
Mixing

Mix it thoroughly using a spatula or whisk without any lumps.
Rice Batter

Once the water is added it must form a liquidy batter
Dough


Add corn starch to the work surface for making dough. Microwave the batter for 1 minute and then take it out and do a fold and mix and microwave for another 30 seconds. It must look like a very sticky dough when it's taken out.
Making Bites

Take out small portions from the dough to make mochi balls.
Filling

Add the filling. I used mango ice cream, strawberry ice cream and chocolate ice cream as the fillings.
Bites

Make balls and keep them in the freezer for 2-3 hours or overnight if you prefer.
Freeze

These are the frozen mochi ice cream balls right from the freezer.
