Mocha Cupcakes
Delicious mocha cupcakes! It has a great coffee flavor and would be lovely if topped with a buttercream frosting, but it's whatever you prefer. Hope you enjoy. (:
Ingredients
1 1/2 cups all purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup vegetable oil
1 1/4 cups sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tbsp coffee powder (instant is recommended)
3/4 cup room temperature water
1/3 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup vegetable oil
1 1/4 cups sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tbsp coffee powder (instant is recommended)
3/4 cup room temperature water
Preparation
Preheat oven to 350F and line 12 muffin cups with paper liners.
Flour Mixture
In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set this aside.
Moist Mixture
In a large bowl, whisk together vegetable oil, sugar, eggs, vanilla extract, and coffee powder until combined as much as possible.
Combining the Mixtures
Whisk one third of the flour mixture into the moist mixture, followed by half of the water. Whisk in an additional third of the flour mixture, followed by the remaining water. Whisk in all the remaining flour mixture until no streaks of dry ingredients remain.
Divide
Divide the batter evenly into the prepared muffin pan.
Bake
Bake in the oven for 18-20 minutes until a toothpick comes out clean when stuck in the center of the cupcakes.
Cool
Allow the cupcakes to cool completely on a wire rack and top with frosting if preferred, enjoy!
