Mint Chocolate Cookie Sandwiches
Mint and chocolate is a classic (and delicious) flavour combination. These cookie sandwiches are quick and easy and are a great way spice up a simple chocolate cookie recipe.
Makes about 14 cookies
Ingredients
Cookies
- 142 grams butter (softened)
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup plain flour
- 5 tbsp cocoa powder
- 1/2 teaspoon baking soda (bi-carb soda)
Filing
- 1 cup icing sugar
- 100g butter (softened)
- 1 1/2 teaspoons peppermint extract
- 1 tablespoon milk
- 6 drops green food colouring
Preheat Oven
Pre-heat the oven to 180C (350F)
Butter and Sugar
In a large bowl, whisk the butter and sugar until light and fluffy
Egg and Vanilla
Mix in the egg and vanilla extract
Flour, Cocoa Powder and Baking Soda
In a separate bowl combine the flour, cocoa power and baking soda
Gradually, add this dry mixture to the butter mixture. Mix well.
Baking Tray
Line a baking tray with baking paper
Drop spoonfuls of mixture onto the baking paper (make sure to leave about 4-5 cm between each spoonful, the cookies will expand)
Place in the oven and bake for 10 minutes
Filling
Meanwhile, collect the ingredients for the mint filling
Butter and Sugar
In a large bowl, beat butter and sugar together until light and fluffy
Mint Extract, Milk and Food Colouring
Stir through the mint extract and milk.
Mix in green food colouring, one drop at a time, until the mixture is a light green colour
Cookies
Once cookies are out of the oven, place them on a flat surface to cool.
Make sure to let them cool completely, before adding filling
Constructing the Sandwich
Spread a thick layer of mint icing on the flat side of a cookie
Place a second cookie on top (with the flat side on the icing)
Enjoy!
Your mint chocolate cookie sandwiches are complete!
Add chocolate chips to the cookie mixture to make them extra chocolate-y or replace the mint icing with mint ice cream for a delicious ice cream sandwich!
