Mini Smoked Salmon Sandwiches

Mini Smoked Salmon Sandwiches
Is the First Lady coming over for Tea? Probably not, but if she were, you could impress with these bite sized sandwiches that are full of flavor and take absolutely no time to make!
Here is what you will need to get started:
1 mini loaf of Rye Bread
1 package of Smoked Salmon
4 or 5 Laughing Cow Light Swiss Cheese wedges (plus one to snack on while you assemble)
2 Roma Tomatoes, sliced
1/2 a medium Red Onion, sliced
1 handful of Spring Salad Mix
Fresh Cracked Black Pepper
First, Toast the bread in the oven on a cookie sheet, 400 degrees for about 8 minutes. Then we assemble. Spread a little cheese on each slice of bread, sprinkle a some fresh cracked pepper on one slice of the bread, then add the salmon, red onion, two slices of tomato, add a little lettuce and you’re done! Easy as pie and they taste as good as they look! I am keeping these in my recipe book for my next bridal or baby shower… yummm.
