Mini Quesadilla

With a prep time of under 5 minutes and a cooking time of about 10, this mini quesadilla is the ideal snack.

Ingredients!

One or two, 6 or 8 inch soft tortilla shells.
Red and green peppers
Cheese
Jalapenos
Red onion
Chicken
Black olives
Salsa

Food slicer
Backing sheet or Pizza Stone.

Begin by setting your oven to 375F

If you are using fresh chicken it is fairly quick to fry it on the stove top In a small pan with a little oil. Set the burner temp as required and begin cooking the chicken.

Alternately you can use left over chicken, beef, or skip the meat altogether.

It is important to have all the ingredients thinly sliced. Use a Mandoline slicer for thin even cuts.
Slice the onion, and peppers.

Turn the chicken!

Now grate some cheese.

Portion out some olive and jalapeno slices in small bowls

Place all the ingredients in separate bowls.

Remove the chicken from the frying pan and place it on a cutting board.
Shred the chicken using knife and fork.
Place the chicken back in the pan to make sure is it fully and evenly cooked.

Assemble the Tortilla

For TWO:
Lay one soft shell on the pizza stone(baking sheet)
Place a thin layer of cheese on the tortilla
Next the Peppers
Then the onions
Followed by the jalapenos and olives.
Lastly some shredded chicken and a little more cheese if you desire
Top with another tortilla and bake for 10 minutes at 375F.

For ONE:
Lay one soft shell on the pizza stone(baking sheet)
Place a thin layer of cheese on the tortilla
Place the peppers on one half of the shell
Next the onions
Followed by the jalapenos and olives
and some shredded chicken
Fold the mostly empty empty cheese side evenly on top of the filled side and bake for 10 minutes at 375F

Experiment with different ingredients as you desire.

Remove! Cut! Present! and Enjoy!

Remove the quesadilla from the oven. Use protection as the pan or stone is hot!

Place the heated quesadilla on a heat resist cutting board and section the full round into 8 equal sections (or the folded one into 4 equal sections) using a sharp kitchen knife.

Serve Aesthetically arranged on a plate with salsa or other desirable additions (we are not savages here!) .

If having tequila, enjoy responsibly. Sadly snacking for ONE, can be lonely!
