Mini Pizza-pie

When I cook, I like to play about with the recipes and find different and more interesting ways to present the food.

Recently, I've been playing with the recipe for pizza. This instructable is the end result of various experiments.

A cup-cake sized pizza-pie that is simple to make but still oh-so delicious!

Ingredients

For the dough, you will need:

375g Plain flour

1 teaspoon of salt

1 teaspoon of caster sugar

7g of baking yeast

2 tablespoons of olive oil

The Dough - Step One

Put all the dry ingredients into a large bowl. Mix them together.

Add the olive oil.

Pour in 225ml of warm water. It is important the water is warm for the yeast to work well.

The Dough - Step 2

Using a spoon or your hands, combine the ingredients well and pull it into a ball.

Put the dough to one side.

The Sauce

To make the sauce, you will need:

Chopped/tinned tomatoes

Italian herbs

Salt and pepper to taste

Mix all the ingredients in a sauce pan and heat. Simmer the mixture, letting the water evaporate off, until it reaches a good consistency. If you can still see water in the top (like in the second picture) continue to heat.

The Assembly

You will need a muffin/cup-cake tin.

Roll out the dough, so it's about as thick as 2 pound coins.

Cut out a circle, bigger that the hole in the tin. Press the dough into the hole, so it forms a bowl into which you need to pour some of the sauce.

You can top it with cheese or other toppings such as ham or mushrooms.

Bake at 190 degrees Celsius for 15-20 minutes or until the crust starts to brown.

The mini pizza-pie can be eaten as a snack, at a picnic or even as part of a meal!
