Mini Apple Pies

These mini apple pies are a great spin on a classic dessert. With easy to follow step by step instructions and pictures, this recipe is for anyone! Baking can be intimidating but with steps like these a recipe like this can be broke down with no stress.

Supplies

  • 5 cups skinless, diced apples
  • 3/4 cup Brown Sugar
  • 1/4 cup White Sugar
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Apple Pie Spice
  • 1/8 teaspoon Salt
  • 2 teaspoons Apple Cider Vinegar
  • 2 tablespoons Butter
  • 6 tablespoons Cornstarch
  • 2 1/2 cups Water
  • 2 Cans dough sheet

First peel 5 cups of Apples (roughly 4-5 apples depending on size). Then cut out the core of each apple. Dice apples into small bite size cubes.

Into a large pan add your diced apples along with 2 tablespoons of butter. On medium heat, allow the butter to melt in the pan with apples until they are all coated in butter. Keep on low heat for about 5 minutes to allow apples to become softer before moving on.

At this point you add all of your sugars and spices into a bowl. This would include the brown sugar, white sugar, cinnamon, apple pie spice, and salt. When finished add to the pan of apples and mix. Turn heat back to medium, let this simmer for 6 minutes.

Into a bowl add your water, cornstarch, and apple cider vinegar. Make sure the cornstarch is well mixed into the liquids before moving on. Then add this to your pan of apples, let simmer. Allow this mixture to thicken up in pan until you have a jelly like substance instead of a liquid.

The filling is done when you having tender apples and a jelly like consistency for the juice.

Roll out canned dough onto greased cookie sheet, use any round shape in your kitchen to cut out your dough

I used a mason jar lid but a cup works great as well

Add a small amount of apple filling to the middle of the dough. Then cover with another piece of cut dough.

Grab a fork and go around the edge of each mini pie and push down gently. This will close the edges together keeping the filling inside.

Beat 1 egg in a bowl and brush over each mini pie. This will give the tops a slight gloss when done cooking.

Bake the mini pies at 375 degrees until golden brown. Let cool and enjoy!
