Mini Lattice Apple Pie

The Tiny Things Speed Challenge! Hmmmmm.......what to do! I thought about it for several days and I finally came up with an idea. I had some pie crusts in the refrigerator so maybe I could make a mini pie. Apple pie would be great! A lattice pie would be even better! I hoped it would come together and I was very happy with how it looked and tasted. And it was very fun to do too! Here is how I made my mini lattice apple pie!
Mini Pie Ingredients

cooking spray
a small apple (I used a Gala apple)
pat of butter
1/2 teaspoon granulated sugar
1/8 teaspoon cinnamon
ready made pie crust

toaster oven
small frying pan
2-inch cutter
small serving plate (mine had this cute little bear on it)
1/8 teaspoon measure
small spoon
mini tart pan
sharp knife
baking mat or cutting board
Spray It

Spray the mini tart pan with cooking spray.
Cut the Crusts

Using the round cutter, cut out 2 circles from the crust.
Flatten Them

Set the 2 crust circles on the baking mat or cutting board. Roll and flatten lightly using the rolling pin.
Form the Crust

Gently press the crust into the mini tart pan.
Cut Strips

Cut the other crust into thin strips which will form the lattice top crust. Cover with plastic wrap until ready to use.
Bake It!

Place the bottom crust-filled mini tart pan in a preheated 350 degree F. toaster oven. Bake it for about 5 minutes. The crust is done enough when it turns light golden brown. Remove from toaster oven.
Cut the Apple

Cut the side off of the apple, then cut off the peel.
Dice It!

Cut the apple into thin slices. Turn the apple slices and dice into small pieces.
Cook the Apples

Add the butter to the small frying pan over medium heat. Add the diced apples.
Continue Cooking

Combine the sugar and cinnamon. Sprinkle over the apples in the pan. Cook and stir until the apples soften, about 5 minutes. Remove from heat.
Into the Crust

Spoon the cooked apples into the crust. Allow to cool for about 5 minutes.
Form the Lattice

Use strips of crust to form the lattice top. I used 4 across the top. To form the lattice, place a strip of crust in the opposite direction. Tuck under every other strip. Repeat with 2 or 3 more strips of crust. Cut off any pieces that hang off of the edge.

Place the pie in the 350 degree F. toaster oven. Bake for about 6 minutes, or until the lattice top is lightly browned.
Remove from the toaster oven and cool in the pan for at least 10 minutes.

Carefully remove the pie from the mini tart pan.

My mini apple pie was just as flavorful as a full size pie! It would be fun to serve these at an appetizer party, or for a group of kids just spending the night!
