As someone who likes to make pasta myself, I had to have an attachement to make wonderful cavatelli pasta. In my opinion this type of pasta has the best shape to catch sauce and deliver it into my mouth. The attachement I bought is called MilleGnocchi for the Imperia Pasta Maker and actually can make 3 types of pasta, gnocchetti sardi, cavatelli and rigatelli. But only if you know how to use it. The leaflet and video tutorials were not sufficiently in teaching me how to use the device. This is why I wrote this instructable to help others improve their skills in using the attachment to make very tasty and aesthetic pasta.

First Usage

Before you can actually use the attachement to make edible food, you need to make throwaway dough. There is metal dust still inside of the machine from the production. You can't use water to clean it, thence you have to use dough to catch the dust inside. Better don't eat the first batch, throw it away.

The Right Size

If you use the MilleGnocchi, you have to take a palm sized ball of dough and turn it into an arm-length and fingerbreadth roll of dough. Don't make it too long out of laziness, the weight of the dough can pull itself down and therefor change the thickness.

The 3 Slots

The device has 3 slots to make the 3 different types of pasta, gnocchetti sardi on the left, cavatelli in the center and rigatelli on the right. Hold the roll of dough into the desired slot and crank the handle.

Additional Tools Needed

When the pasta falls out of the device, there is a chance the pieces fall onto each other and then become inseparable. Fresh pasta is sticky. To avoid this, you have to flour the fresh pieces all the time. Oh and did I mention that if you don't have a motor for the pasta maker, then you need at least a 2nd person to use it?

First you need 2 plastic containers and 1 sifter.

Flour on the Go

Put one container under the device and put some flour in it. Now while the pasta falls into the container, either sprinkle flour from the sifter onto them or shake the container after every pasta. If the bottom of the container is full you better throw the pasta into the 2nd container. At the same time check if the device is still firmly attached to the pasta maker. The movements of the crank can loosen the connection.

Storage

For a longer storage or if you make a lot of pasta, sprinkle flour on a plate and cover with plastic wrap.

Is It All Worth It?

Yes it is. The chewing texture has the right resistance for thick pasta. It makes you think you chew on another vegetable in your meal, like mushrooms. The sauce sticks very well to the shapes. As you can see in the pictures, the size of the pasta increases slightly during the cooking procedure.
