Mike's Mimosa

Mimosas are delicious, but sometimes you need to change things up a bit. I decided to spice them up by using Mike's Hard Strawberry Lemonade instead of champagne! The result was delicious!

Ingredients

Ingredients:

  • 1 Bottle Mike's Hard Strawberry Lemonade
  • 1/2 Cup Orange Juice of Choice

Optional Additions:

If you decide to add macerated strawberries (I just thought they were a fun little touch), you are going to need a package (16 ounces) of strawberries and 1/4 cup sugar. You can scale this up or down as you need. You will be adding however much you want so just use a partial package if you only want to do a few glasses.

I let mine sit in the fridge for a few hours in a glass bowl, but you can do overnight if you want. Remember they only last a day or two so don't do these too far ahead of time. When I was ready to use them I used a masher to break them up even smaller. You can just cutting smaller when you start if you want. I liked cutting them a little bigger and then mashing them down till they were how I wanted them.

Mix It Up

Time to mix it. I doubled my batch so I mixed together two bottles of Mike's and 1 cup of Orange juice.

Once it is mixed fill the bottom of your champagne glasses with the macerated strawberries if you decided to use them. Next you pour in the Mike's mix. If you want to try to not disturb the strawberries, hold a spoon in the glass and pour the mix onto that. That will prevent you from pouring right onto the strawberries. They'll still probably float to the top but it will keep them a little separate at least at first :)

Garnish and you are done!
