Easy Dill Rice

This recipe is really easy, healthy, and TASTY!! It doesn't take much time or much ingredients. It also doesn't need much spices because the dill adds all the flavor needed. To go with this dish I recommend, Plain Yogurt. I am a vegetarian so no meat for me but my family says that it goes really well with roasted chicken. Here are the ingredients.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

1 cup finely chopped Dill

1 TBSP salt

3/4 TBSP black pepper

1 1/2 cup rice

1 cup lima beans (fresh or frozen)

1/4 cup chopped onion

3 TBSP olive il

Soak the Rice

Make sure that you have soaked your rice in a bowl with boiling water for at least 1 hour!

The Vegetables

Get you Dill, Lima Beans, and chopped onion and put them all to the side.

Add the Onion

In a bowl with olive oil (3 TBSP) add the onion and keep moving it until it becomes golden brown. These onions should not be large but very small so they do not show up when the dish is finished. Put it on a little less than high level for now.

Add the Lima Beans

When the onions have become golden brown add in the lima beans and keep moving them until some of them have gotten a little brown or until they have thawed if you are using frozen lima beans.

Add the Dill

When you have finished the onions and the lima beans steps put in the dill then mix the dill, onion, and lima bean until they are mixed thoroughly. I just love how all the vegetables look together. So green!! The dill is why the rice will have a green tint to it at the end.

Add the Rice

Add the rice after it has been soaked for at least 1 hour with the vegetables. Do NOT mix the rice right away though!!

The Spices

Add your salt and black pepper in the pot. You can add more salt if you want and more black pepper if you want it spicy. The measurement I put are only basic. You can also add any other spices with your dish that you like, though I do not recommend that because the flavor of the dill might be lost.

Adding the Water and the Oven Settings

Now mix the rice and the spices well then add one cup of boiling water. After you add the water do NOT mix anymore. Put the top on the pot and keep on the same oven settings. When the water is gone (most of it at least) mix a little change the oven setting to low and let cook for 10-15 minutes or until rice is done.
