Microwave Omelette
I absolutely love quick and yummy food especially when it can be made on the relatively cheap side :D (usually less than $2 per cup). I make this multiple times during the week during semester and it is a quick go to before I have to go to early morning classes. It keeps me full for hours and you can make it for breakfast, lunch dinner or even a quick snack.
This is very versatile recipe and you can add or subtract any of the extra ingredients. I never find this recipe boring because i use whatever i have in the fridge like chicken and spinach or ham and cheese the combinations are endless YUM!!!!!!

Ingredients and Equipment
Ingredients For Basic Omelette
- 2 large eggs
- 1 1/2 Tablespoon milk
- 1/4 cup Fresh breadcrumbs (white or wholemeal)
- Salt and pepper to taste
Extra Ingredients
- 1 Tablespoon Cheese
- 3 Cherry tomatoes
- 3 Chives
- Any other meat or fillings
Equipment
- 1 Microwaveable mug or ramekin (holds at least 1 cup)
- Chopping board
- Cutting knife
- Small bowl to mix
- 1/4 cup measurement
- Fork for mixing
- Microwave (I used 1100 watt microwave)
Prepare the Ingredients
Once you have chosen your desired fillings we need to prepare them.
First crumble the fresh bread until you have 1/4 cup of crumbs. Secondly halve the cherry tomatoes and finely chop the chives. Then cut any other fillings you may want to add. (Ham or chicken goes really well in this!)
Now we are going to mix it all!
Prepare the Egg Mixture
Once your fillings are cut and ready crack your eggs into the small bowl and whisk them with the milk until you reach a light and even yellow colour. Add the breadcrumbs, cheese, tomatoes, chives (and any other ingredients) and salt and pepper and mix well.
Microwave and Cook Your Omelette
Pour the egg mixture into your ramekin or favorite mug! Just make sure that there is room in the mug on top of the egg mix as it rises when it is heated. If you are worried that it might overflow (it shouldn't) then place a small plate under the mug or ramekin. (mine was pretty close to overflowing because mine was really full)
Cook the omelette on high for 2-3 minutes depending on how well you liked your eggs cooked. (I cooked mine for 2 minutes to start then needed another 30 seconds in a 1100 watt microwave and it was delicious!)

Once it is out of the microwave leave it for a few minutes to cool so it does not burn your mouth. I love to make this during semester because it is really quick and easy and I can make it in my microwave in minutes!!
