Mi Abuelita Enchiladas - My Granny Enchiladas
Hello there
This is gonna be an instructable for real enchiladas, just as "Mi abuelita" does it.
The whole dish was prepared for under $20 and last for at least 4 people to eat.
The cooking time was about one hour.
Ingredients
- 0.5 pounds of Guajillo Chili.
- 0.1 pounds of Wide Chili.
- 1 medium tomatillo.
- 2 pounds of Manchego Cheese.
- 2 pounds of Tortilla.
- a clove of garlic
- half a cup of cooking oil
- a pinch of sugar, this is the secret ingredient.
Stove Preparation
this is not necessary, but enchiladas tend to be very messy, and if you don't want to clean kitchen for a long period of time, this is a useful advice.
cover the stove in aluminium foil, that way, when your enchiladas are ready, you just have to remove the aluminium foil.
very clever tip, for very clever people.

so, now you have all ingredients blended into a red and delicious pulp, is time to strain it.
put a little portion in a strainer and gently stir with a spoon until the strainer just contains the solid part of the pulp.
this step is real important, because, if you let that solid part (mainly chili peel) enchiladas will cause you some gases and tortilla texture will not be the best one.
Tortilla Cooking
now, on some saucepan, put the oil to heat.
when the oil is ready... lets the fun begin.
first wet your tortilla into the sauce, bot sides must be covered with the sauce, removing the excess, then put the covered tortilla to fry into the oil, this is a quick step, usually 20 to 30 secs on each side, remove when its done, now to the filling
Filling Tortilla With Cheese
put some grated cheese in the tortilla
roll tortilla to make enchilada
and repeat this step as long as you have tortillas, chili and cheese
Dish Presentation
Add some rice, and a salad, and you will be ready to eat this real mexican enchiladas
