Mexican Sweet Bread (Pan Dulce)

Here is a twist on Mexican sweet bread.
I made this cinnamon topped bread in a muffin pan.
Usually the bread is made on a cookie sheet.

Ingredients

This recipe makes 24 sweet bread muffins

THE BREAD

2 1/2 teaspoons yeast

1/2 cup warm tap water

1/2 cup evaporated milk

a 1/4 cup plus 2 tablespoons sugar

1 teaspoon salt

1/3 cup melted butter

1 egg

1 teaspoon cinnamon

4 cups white bread flour

THE TOPPING

2/3 cup sugar

1/2 cup butter

1 cup white bread flour

1 tablespoon cinnamon



Make the Dough

Mix together all the ingredients except the flour. Then slowly add the flour until the  dough makes a ball.

Knead the Dough

Knead the dough on  a floured surface for five minutes.

Then set aside in a covered bowl to rise.

Make the Topping

Mix the butter and sugar until fluffy.

Add the flour and cinnamon and stir to make a thick paste.

Put the Bread in Muffin Tins and Add the Topping

Cut the dough into 24 pieces.

Roll each piece into a ball and place in a greased muffin pan.

Flatten a ball of topping and press it on each dough ball.

Let Rise and Bake

Put in a warm place to rise for one hour.

Then bake at 375 degrees ferinheight for 15-20 minutes.
