Mexican Style Sopitos

What you would be making is a Mexican style sopitos. This one may vary base of some others, but this one has chicken rather than beef. I think that different people, like myself, prefer chicken over beef. I hope that you all may enjoy it.

Supplies

  • Chicken Breast
  • Lettuce
  • Bean
  • Flour
  • Corn Masa Flour
  • Oil
  • Cheese
  • Radish
  • Sour Cream

Cook the Chicken

  • The first thing one is doing is cooking the chicken breast in boiling water with salt.
  • You can also put some onion and some cut tomatoes in the pot, this gives the chicken some flavor.
  • You will cook the chicken for 30 minutes to one hour.
  • Afterwards you are going to let the chicken cool for a bit and then you are going to shred the chicken.

Cooking the Fry Beans

  • First you are going to get uncooked beans and place them on a bowl.
  • Then you are going to put water in them and wash them. The amount of bean depends on the amount of sopitos you are making.
  • Then you place the bean in a pot filled with boiling water. Check the water levels on the beans periodically, the beans will be fully cooked when the bean is soft and easy to squish. This can be between 1 or 2 hours.
  • After fully cooked, grab a pan and drizzle a bit of oil. Then add the cooked bean into the pan, add some of the juice from the pot into the pan as well.
  • Grab a Wire Masher and smash to the beans, after fully smash set it aside.

Making the Tortilla for the Sopitos

  • First grab a mixing bowl, add one scope of Flour and three scope of Corn Masa Flour. You repeat this until you have enough for the amount of sopitos you wanted made. The ratio is 1:3 Flour to Corn Masa Flour.
  • Mix them together and then start adding small amounts of water.
  • When the its all mix and the mixture is not sticking, grab a clean plastic bag (those that you use to but your vegetables in the grocery story) make them into two circles. Make sure you wash them after cutting them.
  • Then grab a pan and put oil into the pan until its hot.
  • Put a paper towel on the bottom and grab flat baking sheet, place the two plastic circles between. Then grab the mixture and make it into a small ball.
  • Put the small ball inside the two plastic circles and squish them with the baking sheet. The mixture should be thick but round.
  • You then your tortilla and place it into the oil. You will flip the tortilla until bottom sides are a gold color.
  • Then move the tortilla into a plate with a towel on it, so that oil is absorb.

Lettuce, Radish, and Cheese

  • You will grab a lettuce head and cut it in the middle.
  • You will cut down and make shred lettuce. The amount is based on how much you will need.
  • You will grab any type of cheese you prefer. The cheese needs to be shredded.
  • The radish will be cut in order to be place on the sopitos.

Assemble the Sopitos

  • You will first grab the one of the tortilla and add the fry beans on top of it. Make sure that it is evenly spread out.
  • Then add the shredded chicken on top of the fry beans.
  • I like to put the sour cream next (this is optional as it can also be the last one).
  • Then add the shredded cheese.
  • Then add the shredded lettuce and then the radish.
  • Repeat this for all the sopitos you make and enjoy.
