Corn, 3 ears
Mayonnaise, 3 tbsp
Mexican Crema, 3 tbsp + more for garnish
Cotija Cheese, 2 tbsp
Smoked Paprika, 1/4 tsp
Ground Ancho Chile, 1/4 tsp
Kosher Salt, 1/2 tsp
Fresh Cilantro, as needed
Limes, 2 each
