Mexican Molletes

Mollete in a open sandwich filled with refried beans and cheese. They are a typical food of Mexico and you can eat them for breakfast or at any time.

Molletes are served warm (cheese should be au gratin) and can be served with Pico de Gallo or Guacamole.

Definetely something you and your family should try!

Ingredients

(makes 8 molletes)

  • 4 bolillo bread
  • 300 grams manchego cheese
  • 1 bag of refried beans (400 grams)
  • Margarine

Cut Bread in Half

Cut Bolillo bread in half. Remove a little of the bread that is inside

Add Margarine

To give a richer taste, add margarine to the bread

Add Beans

Add refried beans. You can buy refried beans previously cooked which are ready to serve (you will save a lot of time). If you do not find those, you just need to cook beans and blend them.

Place in Tray

Place molletes in tray. Ensure they have enough space between one and another.

Add Manchego Cheese

Add Manchego cheese. Actually, any cheese that can get Au Gratin is suitable for this recipe.

Cook Au Gratin in Oven for 10 Minutes

Cook in the oven for 10 minutes. Molletes will get au gratin
