Mexican Layer Pie

This is one of my favourite meals and a go-to for when I have guests to dinner. It is quick and easy to make, serves a lot of people and everybody loves this tasty pie. It is delicious served hot with roasted potato wedges and a green salad.

The recipe that I have given you will make eight jolly good portions.

Because live alone, I tend to divide the cooked meat and vegetables into two halves. I freeze one half of the mixture for later and use the other half to make a four portion pie. I can also freeze portions of the cooked pie which can be easily reheated in the microwave.

Supplies

Ingredients

3 x Bell peppers- red, yellow and green

3 x cloves of garlic or one tablespoon of garlic puree

1 1/2 cups of frozen or tinned sweetcorn

2 x tins of chopped tomatoes

2 x large onions

500g minced beef (I use the 5% fat mince)

One large tub of Greek yoghurt

One pack of corn tortillas

Grated cheddar cheese

2 teaspoons - Ground cumin

2 teaspoons - Ground coriander

1 teaspoon - Mustard powder

1 - 2 teaspoons - Chilli powder

1 tablespoon - Soy sauce

Dessert spoon of oil to fry the beef

Brown and Season the Mince

Using a very small amount of oil, add the mince, the coriander, the cumin, the mustard powder, and the Chili powder to a large frying pan. Cook on a medium heat until the meat has browned.

Dice the Vegetables

Dice the peppers and the onions. I used a dicer with a fine grid to do this. it is important that the vegetables have a uniform size. Add the diced vegetables to the browned meat and continue to cook until the vegetables have softened and the onion is translucent.

Make the Sauce

Into the meat and the vegetable mixture, stir 2 tablespoons of tomato purée, One tablespoon of garlic, One tablespoon of soy sauce and season with salt and pepper. Also add 2 tins of chopped tomatoes and one and a half cups of sweetcorn. Combine the ingredients and cook until the mixture has slightly thickened and reduced.

Construct the Pie

Line a dish with corn tortillas. (You can swap for wheat tortillas if you prefer.) In the picture, I have used a four portion pie dish but the recipe makes up to 8 portions. Add an inch layer of the meat and veg mixture and top it with tortilla. Repeat this process until you have completed three layers. Cover your final layer with tortilla leaving a couple of inches for the topping.

Top the Pie

To complete the pie add a thick layer of Greek yoghurt. Level it out and sprinkle with mature grated cheddar. Bake the pie in the oven at 200° for around an hour until the cheese topping is golden brown.

Serve and Scoff!

I know it is hard, but try to leave the pie to cool for a while as it helps the topping to set before you cut it.
