Mexican Breakfast Sandwich

Hello! Only two extra ingredients and a few minutes transform an ordinary ham & cheese sandwich into an extraordinary one.

Supplies

2 slices bread

1 slice ham

1 slice cheese (I use sliced gouda)

1 egg

a pinch of salt

2 or 3 spoonfulls red mexican sauce (I use store bought, but homemade will do)

Toast Bread

Toast bread in a pan. I like to toast slightly the side I will use inside the sandwich as it adds a bit of crunch.

Then turn slices so toasted side is up and put ham an cheese on one slice and cover with the second one.

Toast Sandwich and Cook Egg

Toast one side of your sandwich, then turn it over and start to fry the egg in another pan so you can keep sandwich warm while egg cooks. For the egg you can use a clean non stick pan or any one covered with cooking spray.

Place in Dish

Put the toasted ham & cheese sandwich in a breakfast dish. Carefully slide egg on top of sandwich. Salt to taste. In the pan you used for cooking the egg put some red mexican sauce to warm for a few seconds.

Almost Ready

Pour warm sauce over sandwich. Serve and ENJOY!!!

Red Mexican Sauce

For this recipe I almost always use any store bought mexican sauce I have in the fridge but it is easy to make it at home.

You´ll need a couple of tomatoes, a small piece of garlic, serrano chile and a small piece of onion. Toast tomatoes, onion, garlic and chile in a clean pan for a few minutes turning frequently to avoid burning. Blend everything. Pour this mixture in an oiled pan and cook for a few minutes. Season to taste.
