You had taco night last night, now what do you do with the leftovers?

It's time for Mexiquiche!

Depending on what is leftover from taco night will determine what goes in your Quiche.

This time the ingredients include:

Tortilla

Re-fried Beans

Saffron Rice

Taco Meat

Dice Green Chilies

Fire Roasted Tomatoes

Eggs

Cheese

Sour Cream

Base-ic Layering

Grab a nine inch pie plate and give it a light coat of butter.

Lay in a 10 inch tortilla.

Re-fried beans

Yellow Rice

Taco Meat

Quiche on Going

4 eggs

Diced Green Chilies

Fire Roasted Tomatoes

Whisk it together and pour in on top of you base layers

Bake It Easy

Preheat the oven to 350 degrees Fahrenheit

Bake for 40-50 minutes (until the center is firm)

Realize you forgot to add the cheese before baking, and turn on the broiler.

Sprinkle a liberal amount of shredded cheese on top and pop it in the oven under the broiler to melt the cheese.

WATCH IT CLOSELY!!

a broiler is a fickle thing .. you cheese can go from solid shredded cheese to cindered mess very quickly if you do not pay attention.

After about two minutes the cheese was melted and just starting to brown.

Let the quiche stand for a few minutes before serving.

Slice it up.

Top with a dollop of sour cream
