Meringue Fruit Tartlets
This is an easy and quick recipe if you love to eat fruits.You can mix all the fruits together or make the tartlets individually with different fruits.I have used fresh fruits,except mandarin ,if you want you can use tin fruits.Try to use seedles fruits to make it easier.
Ingredients
For the meringue
2 Egg whites
100 Gr caster sugar
For filling
Fresh fruits of your choice. I have used -
Strawberries
Grapes
Cherries
Kiwi
Lyches
Mandarin -from the can
For the Glaze
250 ml fruit juice or water
2 Tea spoon arrowroot
4 tea spoon sugar /or to taste
Instead of arrowroot I have used ready made glaze
1 paket Torten guss - sorry I do not know the english name.
Whisk Siff Peaks
For the meringue
Separate egg whites.Whisk the egg whites very stiff with a hand mixer with whisk at the highest setting so that it forms stiff peaks.Whisk in the sugar briefly little by little at the highest setting.
Piping the Meringue
Put the meringue in a piping bag with a big star shape nozzle and pipe in the shape of tartlets ( 2 3/4 inches in diameter) with a border about 3/4 inches high on the baking sheet.
Baking
**Preheat the oven at the top and bottom.Grease the baking sheet and line with the baking parchment.
Top /bottom heat about 120°C/ 240°F ( Preheated)
Fan oven about 100°C /210°F (not preheated)
Bake in the lower shelf for about 60 to 70 minutes until golden color.
Slide the tarts with the baking parchment off the baking sheet and put on a rack to cool down.
these should turn CRISPY!!
Chop the Fruits
Wash and cut the fruits remove stalks..Sprinkle with sugar if desired.I did not use extra sugar.
Make Glaze
I used the ready made glaze by mixing the torten guss ,mandarin juice and sugar together.Boil and simmer until it thickens,cool and apply over the fruits.
Arrowroot Glaze
Make the glaze with the fruit juice and arrowroot.If juice is not enough top up with water.Blend 2 tea spoon arrow root with a little of the liquid,then stir in the rest of the liquid.Boil and simmer for 1/2 -1 minute until it is clear.when it has cooled alittle coat the fruits with a pastry brush.

Serve with whipped cream or vanilla ice cream.
