Meatloaf Mashed Potato Sandwiches

This is a sandwich made with meatloaf, mashed potatoes and dinner rolls. The meatloaf recipe should make enough for 16 small sandwiches.

Supplies

For the meatloaf, you will need:

  • 1lb ground turkey
  • 1lb ground chuck
  • 2 cups cornflakes
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon of garlic powder
  • 1/2 teaspoon of Chef Merito steak and meat seasoning
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon ketchup

For the mashed potatoes

  • 6 potatoes, cleaned and skinned
  • 8 tablespoons unsalted butter
  • 1/2 tablespoon ground black pepper
  • 1/2 teaspoon salt
  • 10 cups boiling water
  • 1/4 cup milk

2 bags of dinner rolls.

You will need a large bowl and a loaf pan for the meatloaf. For the mashed potatoes use another large bowl, liquid measuring cup, large pot and masher.

The oven will need to be preheated to 400 degrees for the meatloaf.

Add the Ground Turkey

In the first step, add the ground turkey to the bowl.

Add the Ground Chuck

In this step, you will add the pound of ground chuck to the pound of ground turkey.

Add Other Meatloaf Ingredients

In this step, you will add 2 dry cups of corn flake and the seasoning. This will be:

  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon of garlic powder
  • 1/2 teaspoon of Chef Merito steak and meat seasoning
  • 1 tablespoon of extra virgin olive oil

Mix well. Add tablespoon of ketchup and mix again.

Add the Mixture Into the Baking Pan

Pat the mixture down into the baking pan. Into the preheated oven, put the loaf pan in. Check on the loaf around 55 minutes to see if it is ready. Turn oven off and take out the loaf.

Check Temperature

After about 55 minutes, pull the meatloaf out of the oven and check with a thermometer.

Wash and Peel 6 Potatoes

Wash 6 potatoes and peel. In a large pot, start boiling 10 cups of water.

Chop Potatoes and Add to Large Pot of Boiling Water

Chop up the 6 skinned potatoes and chop. Add to boiling water.

Add Milk, Butter, Salt and Black Pepper. Mash Potatoes

Move the potatoes to a bowl and add about 8 tablespoons of unsalted butter,1/4 cup milk, 1/4 teaspoon of salt and 1/2 a tablespoon of ground black pepper. Mash together. Set aside.

Cut Meatloaf and Dinner Roll Open

The meatloaf should be cut up into 8 slices. Cut each slice into two pieces. Place 1/2 of the meatloaf slice in the dinner rolls.

Add Mashed Potatoes. Serve

Add a heaping tablespoon of mashed potatoes for each. Close each bun and serve. The meatloaf should make enough for 16 sandwiches, depending on how thick you cut the slices.
