Matcha Goji Berry Granola
I must admit that breakfast is probably my favorite meal of the day. My fiancé quickly learned that if I don't eat within the first hour or two of waking up then I get "hangry". Lately I have been very busy with a new work project (more info to come in another post), and I have been making batches of muesli and granola to keep me fueled in the mornings. These are great healthy grab and go breakfast ideas and you could even keep a jar of the granola at the office. Have it as an afternoon snack with a little Greek yogurt, it beats snacking on chips or cookies.
I have been making my own granola for quite some time now because I found store-bought granola in general a little too sweet for me. Homemade granola only takes about 20 minutes from start to finish and you can change up the recipe depending on what you have stocked in your pantry. This is the recipe from my latest batch and it's based on the pistachio goji berry granola recipe by Love & Lemons. I had it for breakfast this morning with a little Greek yogurt and fresh figs.
Ingredients
1 cup of rolled oats (not instant)
1 1/2 tablespoon of sunflower oil
4 tablespoons of honey
1 teaspoon of vanilla extract
1 cup of chopped pistachios, cashews, almonds, hazelnuts
1/4 cup salted sunflower seeds
1/4 cup coconut flakes
1 tablespoon of sesame
1/3 cup goji berries
2 teaspoons of matcha powder
Directions
Heat a large skillet on the stove over low heat. Add the oats, nut mix, sunflower seeds and sesame to the pan and let them start to toast for a minute or two. Add the sunflower oil and stir to incorporate. Continue toasting the mix for 5 minutes or so, stirring only occasionally. Add the honey 1 tablespoon at a time, and stir to coat. Keep your stove at a pretty low temp so the honey does not burn.
Once the oats and nuts look pretty toasty, add coconut flakes and vanilla extract. Continue to slowly cook until all the ingredients are toasted but not burned (about another couple minutes). You want to stir constantly so everything toasts evenly and nothing sticks to the bottom. Remove from the pan and stir in the goji berries and matcha powder. Let it cool and enjoy!
