Matcha Almond Chocolate Chip Cookies

Hello everyone,

When it comes to choosing an easy to make yet delicious treat, chocolate chip cookies are on the top of my list. As

it turns out, adding matcha powder to the dough makes them even better. They are

soft, chewy and the taste of matcha comes through really well. 

Supplies

Ingredients:

  • 220g all-purpose flour
  • 100 g ground almond
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 3 heaped teaspoons matcha powder
  •  220 g softened butter
  • 200 g sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  •  50 g sliced almonds
  • 160 g chocolate chips

 

Utensils:

  • stand mixer with paddle attachment
  • digital scale
  • bowls
  • silicone spatula
  • sieve
  • parchment paper
  • ice cream scoop
  • baking tray

Mix Dry Ingredients

Sift flour and matcha powder into a mid-sized bowl, add the rest of the dry ingredients: baking soda, salt, almond meal and mix thoroughly.

Combine Wet Ingredients

Add butter into the mixing bowl of a stand mixer equipped with a paddle attachment. Adding the sugar gradually, in 4-5 parts, cream the mixture until light and fluffy. Add vanilla, egg and combine. You may have to scrape down the side of the bowl, so that everything gets fully incorporated. 

Mix Them All

Keep stirring the butter mixture at low speed and add the dry ingredients mixture. Do not overmix, as soon as everything has blended, you're done. Add sliced almonds and chocolate chips, fold in with a spatula. Place the mixture into the fridge for about an hour.

Baking

Preheat the oven to 170 °C (fan).

Lay parchment paper into two baking trays. Scoop the cookie dough onto the parchment, place in the preheated oven and bake for 10 minutes until the edges start to get a slight color.

Magic: in order to get perfectly round cookies, have a large cookie cutter (bigger than the cookies) on hand and right after taking the cookies out of the oven (before edges have started to get firm, place it over the cookies one by one and smooth the uneven edges by swirling the cookie cutter around the cookies.
