Marshmallow Cookie

Do you like marshmallows? well...how about combining it with cookies and jam?
Sounds sinful? it is....sinfully delicious!

Making the Cookie

60 g     salted butter
100 g   sugar
1           egg
1tsp      Vanilla Flavor
225 g     Flour


Beat butter and sugar together till creamy. add 1 eggg and  the 1tsp off vanilla and beat well.
fold in flour,

Now roll the dough on a floured surface.

Cut and Bake

Use  a cookie cutter or a glass to cut the circles.
Divide circles in to groups.
Then for one of the groups use a plunge cutter or again another cookie cutter and cut a flower out in the center...place it on the side of the cookie.
If you are going to coat the whole biscuit with chocolate ( which we would do later) don't cut the center of the cookies.
Bake your cookies for about 10 minutes or until slightly golden.

Make Marshmallow

To make marshmallow you would need

100g caster sugar
1/2 cup water
3/4 tbs gelatine powder
1 tsp vanilla

mix the sugar and water and stirover low fire...sprinkle gelatine over it  and mix well
bring to boil.
reduce heat and simmer for 5 min
Remove from fire and cool
Once cool...beat well till stiff and peaks.
Then put a bag in a cup and spoon the mixture in to the bag
snip off the tip

You are now ready to pipe your marshmallow!

Sandwich Your Biscuits

Now it's time to sandwich your biscuits!
Pipe your marshmallow in a circle and then place a blob of jam in the center...then place your cut open cookie on top and press.
Place in fridge.
Now you need to double boil the chocolate.
To make your homemade double boil..place one pot with water filled up to quarter point...place another pot over the first pot so that it does not touch the water and also covers the mouth of the fist pot...that way...when steam does not escape...it's quicker to melt the chocolate.
Now back to the recipe  :-)

Double boil some cooking chocolate and till it comes thready when you pour from a spoon
With your spoon make random chocolate lines
If you like you can dip the whole biscuit in and coat it all over with chocolate!
