Marinated Chicken Wings With Potatoes
I think it's safe to say that virtually EVERYONE loves chicken wings. Baked, fried, grilled... these little bites of goodness are perfect as an appetizer or a full main course, when served with a side of potatoes, for example.
I'm also sure we all have our favorite chicken wings recipes, so let me show you one of mine.
Today, I'm cooking marinated chicken wings that I'm baking in the oven along with a side of potatoes. And to keep things simple and save some cleaning time, I'm about to bake both the wings and potatoes on the same baking dish. Now let's go.
Supplies
Most of the ingredients you can see on this picture are used for the marinade, the rest is very simple. Let me list them one by one.
Meat & Sides:
15 chicken wings (3-4 servings)
1kg (2lbs) yellow potatoes
2 large onions
5 stalks of rosemary
Tartar sauce (optional)
olive oil
salt & pepper
Chicken Wings Marinade:
4 tablespoons of olive oil
3 tablespoons of soy sauce
2 tablespoons of ketchup
1 tablespoon of mustard
1 teaspoon of black pepper
1 teaspoon of onion powder
1 teaspoon of garlic powder
2 teaspoons of red paprika
1 teaspoon of crushed caraway
1 ½ teaspoons of salt
2-3 tablespoons of water

Make the Marinade
The first step is all about the marinade and it's as simple as it gets. Simply mix all the ingredients together. Based on what ketchup and mustard you use, the marinade might become too thick, add a bit of water if that's the case.
Cut Your Chicken Wings
Some people bake the whole wings, but I like to cut them into smaller pieces. First I remove the tips, because there is no meat on those anyways, then I cut the remaining parts in two pieces.
This way, the wings are easier to handle, they marinade better and they also bake better from all sides.
When cutting the wings, make sure you hit the very center of the joints, it goes very easily if you hit the right spot.
Marinade the Wings
Place all the pieces into the bowl with our marinade and use your hands to properly coat each of them. Feel free to use a spatula if you wish, but it goes better with your hands. And don't forget to wash them afterwards!
Chicken wings need at least 1 hour to marinate properly, but the longer you let them soak up the flavors, the better. Marinate overnight for the best results.
Prepare the Potatoes Now
You will need about 1 kilo or 2 pounds of yellow potatoes. Simply cut them into quarters or larger wedges.
I like to preboil my potatoes in salted water before baking, 15 mins of simmer or so, we don't want the potatoes fully cooked.
Grab a Baking Sheet Now
Let's place the potatoes on a baking sheet (pan) now, skin side down.
You will also need two large onions that you cut in halves. Make sure the onion halves are more or less the same in height, we will use those as extra "legs" to support a wire rack. You will see in the next photos.
Season the potatoes with olive oil, salt and pepper. Adding some herbs is a good idea, I had some fresh rosemary so that's what I've used.
And add a bit of water to the sheet too, just enough to cover the whole bottom of the baking sheet.
Chicken Wings Come Next
Now grab a cooling wire rack and place it over the potatoes. Use the onion halves as legs, these will elevate the rack and prevent it from touching the potatoes. We are doing this to allow the heat to reach the wings from the bottom and bake the potatoes at the same time. This trick makes it possible to use just one sheet pan for this recipe.
Baking Time
Pre heat your oven to 200C or 400F and start baking. The baking time depends on how large the wings are and how browned you want them to be. Aim for 40-50 minutes. I gave mine 50 minutes and they looked like you can see in the photos.
Optional - Broil the Potatoes
This step is optional and it depends on how you like your potatoes. After those 50 minutes of baking, everything is fully cooked and ready to serve.
But, the potatoes are not crispy, because the chicken wings have been blocking part of the heat so the potatoes didn't get enough direct heat.
Easy help though, remove the wire rack and place the sheet with potatoes back into the oven. Set it to max temperature, turn on the broiling mode and place the sheet closer to the top burner. It will only take about 7 minutes for the potatoes to brown, which is short enough for the wings to still stay hot.

Serving Time
And we are all done. I like to use some sauce or dipping whenever I make these wings. Today, I have prepared a homemade Tartar sauce, that's one of my favorites. Oh and, do not discard the "onion legs"! Baked onion tastes just great too :)
